175g / 6oz caster sugar

1 teaspoon lemon juice

3 tablespoons milk

2 bananas, mashed

  • You will need a loaf tin measuring 23 x 13cm (9x5 inches), well greased and lined with baking paper.
  • Sift the flour, bicarbonate of soda, cream of tartar and a pinch of salt into a mixing bowl.
  • Cut the butter or margarine into the flour and rub into a breadcrumb consistency.
  • Mix in the sugar thoroughly.
  • Add the lemon juice to the milk, this will curdle slightly but do not worry at this stage.

  • Make a well in the flour mixture and mix in the banana mixture with a wooden spoon.
  • Turn into the prepared tin. Smooth the top and dredge with the sugar.
  • Bake the cake in a preheated oven: 180C / Gas mark 4, for 1 ¼ hours or until a skewer inserted in the middle comes out clean.
